📝 Ingredients

For the crust:

  • 4 cups all-purpose flour
  • 1 cup (2 sticks) cold butter
  • 1 whole egg
  • 1 egg yolk
  • 1 teaspoon salt
  • 2–4 tablespoons ice water

For the filling:

  • 2 cooked chicken breasts, shredded
  • 4 strips bacon, diced into small cubes
  • 1 tablespoon olive oil
  • 1/2 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tomato, diced (seeds removed)
  • 1/2 cup corn (optional)
  • 1/2 cup peas (optional)
  • 1/2 cup tomato sauce
  • 1/2 cup cream cheese (or Brazilian requeijão – a must try)
  • Salt and pepper to taste
  • Fresh parsley or cilantro, chopped

For brushing:

  • 1 egg yolk

👩‍🍳 Instructions

1. Make the crust

  • In a large bowl, combine flour and salt
  • Add cold butter and mix with your hands until you get a coarse crumb texture
  • Add the egg and egg yolk
  • Mix gently until a dough forms (do not knead)
  • Add ice water
  • Wrap and refrigerate for 30 minutes

👉 Pro tip: keeping the butter cold is key for that flaky, tender crust

2. Prepare the filling

  • In a large pan, cook the diced bacon until crispy
  • Remove excess fat if needed (leave a little for flavor)
  • Add onion and garlic, sauté until fragrant
  • Add tomato and cook until softened
  • Stir in shredded chicken
  • Add tomato sauce, corn, and peas
  • Season with salt and pepper
  • Mix in cream cheese until creamy
  • Finish with fresh herbs
  • Let the filling cool completely

3. Assemble the pie

  • Preheat oven to 350°F
  • Divide dough into two parts
  • Roll out the dough and line a baking dish
  • Add the cooled filling
  • Cover with remaining dough
  • Seal edges
  • Brush with egg yolk

4. Bake

  • Bake for 35–45 minutes, until golden brown

💡 Tips for Best Results

  • Don’t skip chilling the dough — it makes a huge difference
  • Let the filling cool before assembling (prevents soggy crust)
  • Use a deep dish for a generous, bakery-style pie
